Homemade Kimchi
Those who knew me, know that I love Kimchi.
But Kimchi is quite expensive (one small box cost like rm15+? ), and you can only find them in International supermarket, such as Cold Storage. I believe that supermarket like Tesco and Giant, don't sell Kimchi.
So, to save your (my) money, I decided to teach you guys how to make Kimchi at home :D
The ingredients are super easy to be found and all the ingredients are very cheap.
So let's get started !
Ingredients
1 (about 1kg) of chinese cabbage60g salt
1 onion
5 pips garlic
30g ginger
1/2 apple
1 carrot (strip)
1 radish (strip)
5 tbsp chilli powder
2 tbsp fish sauce
2 tbsp apple vinegar
3 tbsp sugar
1 tsp salt
1 stalk spring onion
First, prepare all the ingredients that have mentioned above ;)
Then, cut the chinese cabbage lengthwise into 1/4
And rub each leaf with salt.
*Make sure that you have rubbed each leaf evenly.
Leave aside for about 4-5 hours.
Step 2: Chop the onion, garlic, ginger, and apple into small pieces.
And then blend them !
*Make sure that they're blended fine
Step 3: Cut the carrot and radish into strips
After that, put the blended mixture and the carrot and radish into a big bowl
Step 4: Add chilli powder,
fish sauce,
vinegar,
sugar and salt into the big bowl.
Not to forget to add the spring onion !
Mix them well and your kimchi sauce is done ;)
You can immerse the cabbage in the water if you want, to make the cabbage less salty.
*Make sure that you squeeze them dry
Step 5: Rub the cabbage leaf with the kimchi sauce evenly.
Lastly, put the kimchi into glass jar and press them until compact.
*leave the kimchi for ferment at room temperature for 1 day, and preserve it into the fridge after that.
